Ingredients

  • 4 oz Grilled chicken breast teriyaki glazed
  • 1/2 cup Steamed jasmine rice
  • 1/4 cup Shelled edamame high-protein
  • 1/4 cup Sliced carrots
  • 1 tsp Sesame seeds

Method

  1. Prepare the Glaze: In a small bowl, whisk together 2 tablespoons of teriyaki sauce, 1 teaspoon of soy sauce, and a squeeze of fresh ginger juice to create a concentrated flavor profile.
  2. Sear the Chicken: Heat a drizzle of avocado oil in a pan over medium-high heat. Add the sliced chicken breast and sauté for 5–7 minutes until fully cooked. Pour the glaze over the chicken, tossing for 1–2 minutes until the sauce reduces and coats the meat thoroughly. Remove from heat and let it cool completely.
  3. Steam the Rice: Prepare the jasmine rice according to package instructions. Spread it out on a tray to cool rapidly, which prevents it from becoming mushy when packed.
  4. Assemble the Base: In the main compartment of your bento box, add the cooled jasmine rice.
  5. Layer the Protein & Veg: Place the glazed chicken over the rice. Add the shelled edamame and sliced carrots in the remaining compartments.
  6. Garnish: Sprinkle toasted sesame seeds over the chicken and carrots for an added aesthetic and textural crunch.
  7. Storage: Keep refrigerated. This dish remains fresh and delicious for up to 3 days when stored in an airtight bento container.
