Ingredients
  

  • For the Salad Base:
  • 2 cans 15 oz each of chickpeas, rinsed and thoroughly drained
  • 1 large English cucumber diced
  • 1 cup cherry tomatoes halved
  • 1 medium red bell pepper finely chopped
  • 1/3 cup red onion finely diced
  • 1/2 cup pitted Kalamata olives sliced
  • 1/4 cup fresh flat-leaf parsley finely chopped
  • For the Homemade Zesty Dressing:
  • 3 tablespoons premium Extra Virgin Olive Oil
  • 2 tablespoons fresh lemon juice about 1 juicy lemon
  • 1 clove garlic minced or grated
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly cracked black pepper

Method
 

  1. Prepare the Chickpeas: Open your canned chickpeas, pour them into a colander, and rinse them thoroughly under cold running water. Let them drain completely. Pro tip: Pat them dry with a clean kitchen towel. Removing excess water helps the dressing stick to the chickpeas much better!
  2. Chop the Veggies: On a clean cutting board, dice your cucumber, chop the bell pepper, half the cherry tomatoes, and finely mince the red onion. Try to chop everything into uniform, bite-sized pieces so you get a bit of everything in every spoonful.
  3. Mix the Dressing: In a small glass jar or bowl, whisk together the extra virgin olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper until the oil and juice emulsify (blend together).
  4. Combine Everything: In a large mixing bowl, combine the drained chickpeas, chopped cucumber, tomatoes, bell peppers, red onions, and sliced Kalamata olives.
  5. Toss and Garnish: Pour the homemade zesty dressing over the salad. Use a large spoon to toss everything together gently until every ingredient is beautifully coated. Garnish with fresh chopped parsley.
  6. Serve or Store: You can serve this immediately, but letting it sit in the fridge for 30 minutes allows the chickpeas to absorb all the rich flavors of the garlic and lemon dressing.
